 2 lbs Russet potatoesWashed, peeled, and diced into 1/2 inch cubes
 3 tbsp Avacado oil
 1 tsp Kosher salt
 ½ tsp Garlic powder
 ½ tsp Paprika
 ½ tsp Onion powder
 ¼ tsp Freshly ground black pepper
 2 tbsp CBD-infused coconut oil
 1 Sweet onionChopped
 1 Green bell pepperSeeded and chopped

Preheat oven to 400 degrees Fahrenheit. Line a large baking sheet with a silicone baking mat and set aside.

With a large bowl, combine potatoes, avocado oil, salt, garlic powder, paprika, online powder, and pepper. Toss well to coat.

Move spiced potatoes to the prepared baking sheet and arrange in a single layer. Bake for 20 to 25 minutes, or until softened and beginning to brown.

While the potatoes bake, in a large skillet heat over medium to low heat, melt the CBD-infused coconut oil.

Add onion and green peppers and saute for 10 to 15 minutes, or until softened and translucent. Do not turn the heat up; this will negate the CBD.

Once the potatoes are done roasting, turn the oven to broil. Broil the potatoes for 4 to 5 minutes until golden brown and crispy.

Add potatoes to the CBD onions and peppers and toss to coat. Check for seasoning and enjoy!
